Ingredients
6-8 corn tortillas
2 lbs ground beef
1 cup green peppers and onions, chopped
2 packs taco seasoning
1 tsp cayenne pepper or hot sauce, optional
1 1/2 pack of monteray jack cheese
3 tbsp Salsa
Sour cream, chopped green onion for garnish
Plan
Brown ground beef in a skillet.Add green peppers and onion. Drain.
Return drained beef long with peppers and onions to skillet.Add taco seasoning and just enough water to cover. Boil. Then simmer for fifteen minutes.
In a seperate pan on stovetop, place corn tortilla inside. Scoop the taco meat mixture, salsa and cheese on top. Repeat multiple layers. Top off with corn tortilla, salsa and cheese. Let simmer until cheese is well melted. Serve with salsa, sour cream and garnish with chopped green onions is optional.
Pair with a nice side salad.
