Egg Plant Parmesan Spaghetti Dinner

Decided to make Saturday dinner quick and easy by having eggplant parmesan with veggie spaghetti. Spaghetti is one of my favorite staple foods and eggplant is just so yummy 😋. Putting them both together in a recipe is bound to be absolutely delicious. Also it was awesome to find a fresh pack of already sliced eggplant(a little under 1lb) for $2.87 at a local grocery store.

Ingredients & Plan

1/2 Box Veggie Spaghetti

Eggplant slices

2 Brown Eggs

Seasoned Panko Bread crumbs

Marinara sauce

Mozzarella cheese

Grated Parmesan

Boil noodles as directed and drain.

For eggplant- Dip eggplant in egg and then breadcrumb on both sides. Place oil in pan and fry eggplant on both sides and drain. Add marinara, eggplant and cheese to pan. Let simmer for 15 minutes. Sprinkle grated parmesan atop served eggplant/spaghetti.

Salad and garlic sticks are very common sides.
