I wanted to try a new apple pie filling recipe. So I decided to create these apple pies to share with the family.
Recipe
5 Roma apples
1 pack (10 count) empanada discs for baking or frying
1 cup sugar
1 tsp cinnamon
1 tsp nutmeg
2 tsp vanilla
11/2 tbsp lemon juice
Plan
Rinse, peel and chop apples. Add to a pot.
Pour enough water in to cover apples completely.
Add cinnamon, sugar, vanilla, to to pot. Boil for 30-45 minutes stirring occasionally till tender. Let cool.
Roll out each disc. Fill one side with a tablespoon of filling and fold in half. Press ends closed with a fork.
You may brush with melted butter and bake at 350 degrees for 30-40 minutes. Let cool and enjoy.
Follow packaging instructions if choosing to fry apple pies instead.
