Curry Chicken Family Meal

Thursdays was one of the days my mom had to go to dialysis. As a good daughter should, I’d taken on the task of preparing meals for her to eat on that evening every week. With her being on a special diet, I tried hard to stick to it and still make the meal enjoyable for her.

Ingredients and plan

1+ lb of chicken wings

5 potatoes

1 bags baby carrots and few for pot with chicken

1 can coconut milk

1 can chick peas(drained)

Onion and peppers

1 tbsp minced garlic

Seasonings- Thyme, allspice, black pepper, ginger, paprika, cayenne, curry powder, chicken seasoning,

Of course rinse/ soak the chicken in lemon and/or lime.I know that others don’t😂, but amongst me and mine, its a must.

Towel pat and dry chicken.

Season chicken with curry, paprika, chicken seasoning, black pepper, cayenne and set aside.

Put olive oil in skillet.Add 1 cup peppers and onion.Stir till translucent.Then add 1tbsp of minced garlic. Next 2 tsp of curry powder to “burn” curry. Add chicken turning often for browning on both sides. Then coconut milk, chick peas, potatoes and carrots and stir. Next add 1 tsp all spice, 1 tsp ginger, 1tsp thyme, 2tbsp tomato paste and a few more dash of cayenne. Stir again. Add water just enough for liquid to cover ingredients in pot. Let boil.Then simmer about 45 minutes.

You can serve with rice and vegetables. Also you can have as part of a chicken Roti meal.
