I bought a crepe maker that has so many uses. One thing I’m most interested in making with it are Roti skins. With the Chistmas holiday approaching and my impending birthday, I decided to put Roti on the menu. I have always enjoyed Roti with different curried meats from childhood and it does speaks in part to my family’s Caribbean ancestry. Also some of my oldest friends, whose lineage is from Trinidad and
Tobago, would have Roti as a staple food in their home and share with me quite often.
