The previous post was about the Eggplant Parmesan and Spaghetti I cooked for dinner on Saturday evening. Since then I have used the leftover eggplant to make a delicious toasted sub sandwich. With only the spaghetti left over, I decided to fry a few pieces of cat fish using my all time favorite Louisiana fish fry to create a meal along with a fresh green salad.( see above picture).
