Another cold, rainy day in the NYC, prompted me to make one of my favorite comfort foods, chicken soup. Along with chicken and fresh vegetables, I also used the Grace brand soup mix. The smell of this hearty soup is absolutely amazing and tastes fantastic.
Ingredients
2 packs Grace chicken soup mix
8 cups water
2 Red potatoes cut
1/2 c Carrots
1/2 c Green beans
1/2 c Spinach
4 mini Ears corn
1 pound plus chicken for soup (chopped)
Plan
Soak chicken in lemon juice and rinse. Towel pat dry and season.
In a seperate pan with cooking oil, brown chicken, adding onions,peppers and minced garlic for additional flavor. Drain and set aside.
Bring 8 cups cold water to boil in a large pot.
Add 2 packs of Grace’s chicken soup mix. Let boil 5-7 minutes.Then add vegetables. Cook for 20 minutes.
Place chicken in soup pot, reduce heat and cook for an additional hour.
Let cool. Serve with small side of rice or homemade corn bread.
